SmartBran Curried Squash Soup
1 T Vegetable Oil
4 tsp Curry Powder, mild
2 pkg (12 oz each)Squash (frozen, pureed, unseasoned)
4 cups Vegetable Broth
1 cup SmartBran Cereal
Pepper to taste
3 T Cilantro, finely chopped
In a 3-quart heavy pot, heat oil over medium heat. Add curry powder and stir for 30 seconds. Immediately add both blocks of frozen squash. Add SmartBran and pour in broth. Bring mixture to a boil. Cover and cook over medium-high heat for 5 minutes. Stir well. Season soup with pepper. Continue cooking until all squash is defrosted and all SmartBran cereal has dissolved and thickened soup, about 2 more minutes. Ladle soup into soup bowls. Garnish with cilantro.
